Learning Through Pictures: Nutrition and Physical Activity Health Literacy for Adults with Developmental Disabilities
Project Description:
The goal of the Learning Through Pictures project is to improve nutrition and physical activity knowledge and improve food choices among adults with intellectual and developmental disabilities (I/DD) using visual learning. Eight to ten Special Olympic athletes (thirty years or older) will be recruited at a local Chicago-based agency that provides services for adults with I/DD. The Nutrition and Activity Knowledge Scale (NAKS) is an eighteen-question survey that will be used to assess nutrition and physical activity knowledge before and after the program. Upon completion of the baseline assessment, eight 1-hour education sessions will be held once a week at participant's day program or at their group homes. Learning through Pictures: Nutrition and Physical Activity Education Curriculum will be used to teach participants essentials of a healthy diet, food groups, differences between protein, fat, and carbohydrate, benefits of physical activity, and different kinds of physical activity.
Project Objectives
1. Adapt/evaluate Nutrition and Activity Knowledge Scale (NAKS) for adults with I/DD.
2. Assess the level of nutrition and activity knowledge, essentials of a healthy diet, and the benefits of physical activity in people with I/DD using NAKS.
3. Develop Learning through Pictures: Nutrition and Physical Activity Education Curriculum for use with adults with I/DD.
4. Conduct eight 1-hour nutrition and physical activity education sessions using the Nutrition and Physical Activity Education Curriculum with adults with I/DD.
5. Evaluate the impact of the nutrition and physical activity education sessions through follow- up NAKS questionnaire.
