Nutrition is for Everyone Ambassador Updates - Arkansas

Nutrition is for Everyone (NIFE) in Arkansas (AR) hosted their second large-scale train-the-trainers course in Jonesboro. During this course, NIFE AR educated disability facility employees on how to host and teach a 6-week adapted Cooking Matters class series. Each employee plans to begin offering a class in the new year, this will reach over 30 disability facilities in the North-East portion of the state.

In December, NIFE AR met with the directors of Pathfinders Inc. to discuss starting a class series in the new year. The Pathfinders facility, located in Bentonville, has hired a full-time employee to teach these classes year-round, whom NIFE AR will train. 

Further, NIFE Arkansas has partnered with Special Olympics to create a video series featuring NIFE AR adapted recipes and nutrition education lessons. The launching of the series will take place in January 2018 via local news channels, the Special Olympics website, and email to additional outreach partners.

Lastly, the first class of the monthly series at Buffington Towers took place in Little Rock. NIFE AR met with a group of ten participants, where they went over nutrition education and cooked an adapted healthy recipe. The featured recipe of the month is Black Bean Quesadillas. The participants had a blast and enjoyed the recipe, many tasting avocados for the very first time!
