Arkansas
Arkansas (AR) hosted a large-scale Train-the-Trainer training course. During this course, Nutrition is for Everyone (NIFE) educated disability facility employees, community members, and families of people with disabilities to host and teach a 6-week adapted Cooking Matters class series. Arkansas NIFE will be able to extend their reach by allowing these now certified instructors to offer classes on their own throughout the entire state.
In November, AR NIFE met with two University Dietetic Internship directors to set up a training class to educate the new dietetic interns on the grant and classes/events that AR NIFE has to offer. Arkansas NIFE will train the students and then receive free volunteer assistance for the 6-week cooking classes, events, and additional activities during the school year.
AR NIFE met with the directors of a local disability facility, Pathfinders Inc., and will begin a class series in the new year. After offering the first series, the facility will then host the classes on their own multiple times per year, making it a staple in their yearly activities offered.
They also partnered with Special Olympics to work at a Live Healthy Nutrition event that reached community members, people with disabilities, disability staff, and families. AR NIFE offered healthy snacks along with nutrition education materials, and reached over 100 participants at the event and handed out apples as a healthy fruit option!

Louisiana
The Louisiana Nutrition is for Everyone (LA NIFE) project graduated three groups of participants from its inclusive 6-week Cooking Matters courses in November. Participants learned about maintaining a healthy diet on a budget, developed new culinary skills, and learned how to shop smart at local grocery stores. Participants also reported reading labels more often, having increased awareness of what's in the foods they eat, and feeling more confident in their ability to cook healthy, delicious foods! Furthermore, the Little Bitty Learning program run by Schweitzer Fellow Lisa Staples, for which the LA NIFE Ambassador offered mentorship and technical assistance, also wrapped up this month after successfully serving 9 parents and 14 children at an Early Head Start Center in New Orleans.
Additionally, the LA NIFE Ambassador represented the project and LSU Health at a Complete Streets Coalition meeting to bring awareness to the needs of individuals with disabilities to have access to safe, efficient, and convenient transportation in order to maintain good nutrition and health. Finally, LA NIFE has begun a relationship with Special Olympics Louisiana which is currently working on an 8-week nutrition and physical activity curriculum to be piloted in February 2018. The LA NIFE Ambassador and Deputies will offer support in the development, implementation, and evaluation of the nutrition portion of the program.

Mississippi
LaShaundrea Crook, MS, RDN, LD, is Mississippi's (MS) newest Nutrition is for Everyone (NIFE) deputy ambassador. LaShaundrea will serve as the instructor for NIFE MS' five training sessions that will be held across the state starting in January. A trained community-based nutritional researcher and educator, she has developed a training curriculum for NIFE MS and activities for both the recruitment events and the nutritional trainings. Following the instruction portion of the trainings, she will also assist participants in a hands-on activity that encourages both eating more fruits and vegetables and preparing more meals at home. "People with disabilities and their families are interested like all of us in eating nutritiously," said LaShaundrea, "I look forward to directing them toward more healthy eating and the enjoyment of more fruits and vegetables in their daily diets."

Oklahoma
Deputy Ambassadors at Oklahoma's (OK) Nutrition is for Everyone (NIFE) taught a nutrition class at the monthly Oklahoma Self Advocacy Network meeting and incorporated a healthy snack demonstration - Pumpkin Pie Greek Yogurt Parfaits. Two representatives involved with OK NIFE attended the AUCD conference in Washington, D.C. last month and participated in a presentation with fellow Nutrition is for Everyone ambassadors from other states.

Tennessee
The Tennessee (TN) Nutrition is for Everyone (NIFE) Nutrition Ambassador met with two Nashville dietetic and intern programs who work with postsecondary education programs at their universities. Suggestions were given and plans made for assisting at Lipscomb in the spring semesters. The Vanderbilt interns and their director invited the Nutrition Ambassador to a "Veterans Day" holiday meal cooking class with the post-
secondary education students who the interns have been meeting with for health coaching this fall.
