 #WellnessWednesday and to share healthy eating and nutrition tips for people with disabilities.

 

  Nutrition is for Everyone Ambassador Updates

 

Arkansas

Nutrition is for Everyone in Arkansas (NIFE AR) continues to plan and create their approach to year two. They are currently recruiting and selecting Deputy Ambassadors and Nutrition Advocates to assist them over the grant year.

NIFE AR finished their Disability Facility Nutrition Education curriculum to educate staff and family members on adequate nutrition information to care for people with disabilities (PWD). They are working with a local university to create a video of this curriculum to send out to state and private disability facilities in Arkansas.

On September 29th, NIFE AR hosted a nutrition education booth for the Department of Human Services at their annual Fall Festival and Crafts Fair. The fair focused on raising money by allowing PWD to sell handmade crafts. The money funds disability program improvement throughout the state. NIFE AR's booth offered nutrition education, nutrition games, providing free healthy snacks, and interactive activities.

NIFE AR met with their Special Olympics AR partner to set event dates for the upcoming year where they will provide nutrition education to their athletes, up to 15,000 total, in the state. They are also working to recruit an individual with an intellectual disability from Special Olympics AR to serve as a nutrition advocate. This nutrition advocate's role will be to assist with creating a series of YouTube cooking videos (recipes from their adapted Cooking Matters classes) for the athletes viewing, along with the public.

Finally, NIFE AR is currently working with the Disability and Health grant and Special Olympics Arkansas to host a large training event, scheduled for October 31st, for the adapted Cooking Matters classes. They will provide hands-on training for trainees who could then host their own adapted Cooking Matters classes which will help increase NIFE AR's reach throughout the state.

Louisiana 

The Louisiana project will have four inclusive Cooking Matters courses underway during the month of October. One course is being hosted by an Arc of Metairie, and  Arc staff have been trained to act as instructors. A second course is being hosted by Helping Hands of New Orleans, a home care agency that will teach the nutrition and culinary lessons to their staff and clients side by side. Staff and clients will learn how to not only improve their own nutrition behaviors individually but will learn how to work together to ensure clients are part of the cooking- and nutrition-related decision-making processes in their homes. A third course will be offered in partnership with the LSUHSC Department of Family Medicine and will be taught by trained medical students enrolled in a nutrition elective course. Students will learn how to engage in real-world nutrition counseling with community members, both with and without disabilities. Finally, a fourth class will be offered in partnership with the Louisiana UCEDD's Pay Check program, a transition program for young adults with disabilities. Pay Check students will enroll in the Cooking Matters classes alongside their peers at the community college they attend.

The Louisiana project also provided Second Harvest Food Bank with informational materials related to disability and food insecurity to be provided to state policymakers at their presentation on debunking myths around food bank use at the end of September. The materials highlighted research that shows that people with disabilities and their families are at greater risk of economic hardship and therefore greater risk for periods of food insecurity. The Louisiana project is also exploring ways to advocate for improved Complete Streets policies in the New Orleans area in order to ensure people with disabilities are able to access health and nutrition-related resources.

Mississippi

Nutrition is for Everyone Mississippi (NIFE MS) traveled to the Mississippi Delta on September 20th, to display at the L.I.N.K.S for Healthy Lifestyles event in Greenwood. L.I.N.K.S., which stands for Linking Individuals to Necessary Knowledge & Resources, sponsored the retreat for people, and their caregivers, who are at risk for or diagnosed with heart disease, stroke or diabetes. Twenty-six vendors provided health screenings and information for a large crowd of attendees at the Leflore County Civic Center. Nutrition Ambassador Alma Ellis provided information about the NIFE MS project and informed local participants that the project will be returning in a few months for an informational and educational session. Several participants shared their contact information to be notified when the NIFE MS event will be held in Greenwood. Greenwood will be one of five locations across the state where NIFE MS health and information events will be held during the upcoming project year.

While attending the L.I.N.K.S. health fair, Alma was also able to network with local health care professionals and community leaders who can assist with planning for the NIFE MS event. Additionally, Alma has been networking with professionals in Hattiesburg who can provide support in other areas of the state.

Oklahoma

Deputy Ambassadors in Oklahoma are preparing to teach a nutrition class in Spanish focused on reading the food label and ways to decrease extra salt in the diet. The Deputy Ambassadors from the Oklahoma Self-Advocacy Network are teaching a breakout session on healthy eating and plan to announce a nutrition challenge contest at the annual Oklahoma People First Conference.

Tennessee


Nutrition education for the post-secondary education program at the University of Memphis finished in September. This fall, with 24 students, there were 2 separate classes of 12 each. The curriculum developed last spring is being fine-tuned, but going well. One interactive activity that has been enjoyed is a guessing game where one partner is given a card with a picture of a fruit or vegetable and gives descriptive words or clues until the other one can guess what it is. They also sampled fruits and vegetables that may have been new to them. September's sample was

jicama sticks, snap peas, and freeze-dried green beans, which includes using words to describe how the food tastes (sweet, salty, etc.) and feels in the mouth (crisp, soft, crunchy, etc.), as well as whether they liked it or not.

Social Media through Facebook, Twitter, and Pinterest is going strong! Their outreach is expanding with regular postings, and as more people, including students and their families, follow the page, they are getting comments and questions and a chance for brief interactions.

September 15 - October 15 is Hispanic Heritage Month. During this observance, the Office of Minority Health raises awareness of health gaps and provides a platform for national Hispanic/Latino health organizations to discuss the challenges and opportunities in helping end health disparities.
