 We will be sharing this newsletter on the first Wednesday of every month to observe 
 #WellnessWednesday and to share healthy eating and nutrition tips for people with disabilities.

 

 Nutrition is for Everyone Ambassador Updates

Arkansas
The Nutrition Ambassador in Arkansas is currently adapting the Cooking Matters curriculum to be shared with people with disabilities. Deputy Ambassadors have been selected and will conduct the six week Cooking Matters classes in their regions for people with disabilities and their families. They are also partnering with the Hunger Relief Alliance, the state SNAP program, and providing technical assistance to a senior housing group on creating community gardens. They are also partnering with Fresh to You to help residents in food deserts have access to fresh fruits and vegetables. They have also created a newsletter and Facebook page.

A New Ambassador for Arkansas
Sarah Keathley, MS, RD, CSP, LD has been appointed as the new Nutrition Ambassador for Arkansas. Sarah is a registered dietitian with a B.S. in Nutrition from the University of Central Arkansas and also graduated from the University of Central Arkansas with a Master's Degree specializing in Nutrition.

Sarah is currently a private nutrition consultant and also a nutrition coach/advocate for Fuel Up to Play 60 within Arkansas schools. She has over 5 years of experience in grant and policy work, nutrition research, clinical nutrition, pediatric nutrition, individual nutrition counseling, and group weight management. She has lectured widely on various nutrition topics including renal disease, cardiovascular disease, diabetes, nutrition in people with disabilities, and weight management.

Sarah Keathley is an active contributor in the nutrition community working closely with multiple local schools to improve community wellness and nutrition education in the youth of Arkansas. Sarah has also assisted in educational cooking classes promoting the farm to table movement. She also currently belongs to the national Academy of Nutrition and Dietetics and the Arkansas Dietetic Association where she serves as the fundraising chairperson. One of her biggest passions is to reach out to those who are in need of nutrition education/support and provide them with the tools to live a healthier and happier life.

Louisiana
The Louisiana Nutrition Ambassador is working to partner with the Second Harvest Food Bank to provide Cooking Matters Classes to people with disabilities and their families and are adapting the curriculum and recipes to be more accessible. The Nutrition Ambassador has chosen six deputy ambassadors who will assist her with the education trainings. Trainings will be held in three regions this fall with additional ones next year. They are also partnering with Families Helping Families and state Employment Agencies. They have created a Facebook page, and are in the process of creating short videos to supplement their trainings.

Oklahoma
The Nutrition Ambassador is working with the Self Advocate Network to embed nutrition education into Healthy Living trainings. Two self-advocates have been identified as deputy ambassadors and will conduct the trainings in their regions. Oklahoma is also working with Latino family support groups which consists of families who have children with disabilities. Two ambassadors have been chosen from these groups and they are assisting with the creation of an accessible cookbook and short cooking videos. The Nutrition Ambassador has released a newsletter, created a Facebook page, and Pinterest page.

Tennessee
The Nutrition Ambassador is in the process of selecting deputy ambassadors from undergraduate dietetic programs. These deputy ambassadors will assist with cooking related trainings for people with disabilities and their families. They are also partnering with the Center for Independent Living, as well as local Spanish speaking community groups that provide resources to families. They are in the process of adapting the HealthMatters curriculum for the nutrition education trainings and creating a social media presence. The Nutrition Ambassador has created a Twitter handle, @nutrition4allTN and Pinterest page.

  Partner in Coalition News


Louisiana
Last week six Deputy Nutrition Ambassadors from Orleans, Jefferson, and Rapides Parish traveled to New Orleans to train to become Cooking Matters instructors. These Deputies have returned home to begin recruiting people with disabilities and their friends and family to participate in the six-week cooking course that teaches participants to eat, cook, and shop healthfully on a budget.

Oklahoma
Nutrition is for Everyone-Oklahoma along with The Center for Learning and Leadership/Oklahoma UCEDD would like to thank their community partners who are coming together to promote inclusive nutrition education by and for people with disabilities, their families and friends. Oklahoma partnerships: Oklahoma People First Inc., OKmama support group, Autismo Latino support group, OU Medicine, OU Fit, Variety Care, Oklahoma Developmental Disabilities Council, Sooner SUCCESS, Oklahoma Family Network.

Tennessee
Contacts have been made with several colleges, starting with the University of Memphis Undergraduate Dietetics Program, to help develop curriculum and provide nutrition education and training in their region of Tennessee.

Nutrition is for Everyone Oklahoma will be attending and presenting at the Oklahoma People First (OPF) annual conference, Saturday Oct. 15! OPF is a statewide self-advocacy organization ran by and for people with disabilities.  Food in Season

Grapes are still in season and often "on special" at grocery stores. They are great to eat as snacks or in a lunch box or for dessert. But what happens if you buy too big a bag and can't eat them all right away? Freeze them! Use any color or variety of seedless grapes.

To freeze: take grapes off the stems, wash, and let dry. Freeze in a single layer on a cookie sheet (with sides). Store in a freezer bag. Best quality will be within two or three months.
